Flavoured butters make the most wonderful accompaniments are barbecues with grilled meats
IngredientsCombine 125g softened butter with the following ingredient variations for delicious flavoured butters to serve with pasta, meat, seafood or risotto!
Anchovy and Caper Butter20g each finely chopped anchovy fillets and capers
1 teaspoon finely chopped fresh dill
Olive and Chilli Garlic Butter40g pitted, finely chopped kalamata olives
2 crushed cloves garlic
1-2 finely chopped chillies
Thai Chilli Butter4 chopped small red chillies
1 tablespoon chopped fresh coriander
1 tablespoon finely chopped fresh lemongrass.
All butters will keep for 1 week covered in the refrigerator, or up to 3 months frozen. Roll the butter into a log between sheets of baking paper and chill until firm. Cut into slices and serve with pan fried meat, seafood, risotto or toss through pasta or steamed vegetables
