Watermelon and Snow Pea Salad with Marinated Feta

On a hot summer's day, watermelon and feta is the perfect sweet and savoury combination. Here its combined with crunchy snowpeas, lemon rind and fresh mint for the most delicious salad.

Ingredients

1.5kg seedless watermelon, rind removed, sliced
100g snow peas, trimmed and finely sliced
150g marinated soft feta cheese, oil reserved
1 tablespoon fresh mint leaves
Finely shredded zest of 1 lemon
2 tablespoons lemon juice
1/2 teaspoon caster sugar or honey, or to taste
Salt and freshly ground black pepper, to taste

Method

  1. 1 Layer watermelon, snow peas, cheese, mint and lemon zest on a serving platter.
  2. 2 Shake lemon juice and 1/4 cup of the reserved oil in a screw top jar until combined. Taste and season with sugar, salt and pepper. Drizzle over salad and serve immediately.
