Trim and Terrific Beef Lasagne

This healthier version of lasagne will be popular with whole family. Enjoy with a large green salad.
Ingredients
cooking oil spray1 medium onion, finely chopped
2 cloves garlic, crushed
500g premium extra trim beef mince
850g canned no added salt diced tomatoes
2 tablespoons no added salt tomato paste
2 tablespoons finely chopped fresh oregano
2 tablespoons finely chopped fresh basil
500g low fat cottage cheese
250g frozen spinach, thawed and excess liquid well drained
1/2 cup fresh basil, chopped, extra
200g instant lasagne sheets
100g grated 50% reduced fat cheddar cheese
green salad, for serving

Method
- Lightly spray a frypan with cooking oil spray. Saute onions and garlic until soft. Stir in beef mince and cook until well browned.
- Stir in undrained tomatoes, tomato paste, herbs and simmer for 30 minutes or until most of the liquid has been absorbed. Combine the cottage cheese, spinach and extra basil in a separate bowl.
- Place 1/3 of lasagne sheets over the base of a 2 litre capacity lasagne dish. Cover with 1/3 of the beef mixture and 1/3 of the cottage cheese mixture. Repeat layers twice more and sprinkle with cheddar cheese. Bake at 180°C for 30 minutes, cover with foil and then bake for a further 30 minutes. Serve.
