Try this healthier version of cake for an easy morning tea.
Ingredients
3 eggs1/4 cup caster sugar
2 teaspoons finely grated lemon rind
200g plain flour
2 teaspoons baking powder
1 teaspoon cinnamon
2/3 cup reduced fat milk
2 apples, peeled, cored and sliced
100g light cream cheese
400g diet honey or vanilla flavoured yoghurt

Method
- Beat 2 eggs with sugar and 1 teaspoon lemon rind until pale and thick. Sift in flour, baking powder and cinnamon; fold in gently, alternately with the milk. Pour the mixture into a lined 25x18cm slice tin.
- Combine cream cheese, 100g yoghurt and remaining egg until smooth. Using a knife carefully swirl the cream cheese mixture through the cake mixture.
- Stud the apples into the slice and bake at 180°C for 40-45 minutes, until golden and set. Allow to cool 5 minutes before turning onto a wire rack to cool completely.
- For serving, combine remaining yoghurt and lemon rind. Cut slice into 12 rectangles and dollop with lemon honey yoghurt.
