This quick meatless dinner will engage the most difficult of eaters with its cheesy sauce and colourful vegetables
Ingredients
10g reduced fat dairy spread1/4 cup plain flour
500ml reduced fat milk
1/2 cup grated reduced fat cheddar cheese
1/2 cup grated parmesan cheese
150g macaroni, cooked until just al dente
3/4 cup frozen peas, thawed
1/2 red capsicum, chopped
1/2 cup creamed corn
Method
- Combine spread, flour and milk in a saucepan and bring to the boil, whisking continuously until mixture thickens. Reduce heat and simmer for 2 minutes.
- Add cheeses to sauce and stir until melted. Remove from heat.
- Stir macaroni and vegetables into the cheese sauce.
- Serve warm with a side salad
