250g linguine pasta or spaghetti250g fresh reduced fat ricotta, crumbled
100g smoked salmon, torn into bite sized pieces
100g rocket leaves
½ cup basil leaves, roughly chopped
2 spring onions, finely sliced
½ teaspoon finely grated lemon rind
2 tablespoons lemon juice
2 teaspoons olive oil
freshly ground black pepper, to taste
1/3 cup shaved parmesan, for serving
