Skinny White Sauce (and Variations)

A classic white sauce is essential in any cook's repertoire and this reduced fat version is ideal for those watching what they are eating.
Ingredients
2 cups reduced-fat milk1 1/2 tablespoons cornflour, blended with a little water to form a paste
flavouring of choice, see below
Creamy Sweet Chilli and Corriander Sauce
2 cups White Sauce1/3 cup sweet chilli sauce
1/3 cup finely chopped fresh coriander
salt, to taste
Three Herb and Caper Sauce
2 cups White Sauce2/3 cup finely chopped fresh herbs (basil, chives, continental parsley)
1 tablespoon tiny capers (or regular capers, chopped)
grated rind of 1 lemon
lemon juice, to taste
salt and freshly ground black pepper, to taste
Seeded Mustard and Garlic Sauce
1 teaspoon butter2 cloves garlic, crushed
2 cups Reduced Fat White Sauce
2 tablepoons seeded mustard
lemon juice, to taste
salt and freshly ground black pepper, to taste
Method
- Combine milk and cornflour paste in a saucepan and cook, over medium heat, stirring with a wooden spoon until slightly thickened.
- Add flavouring of choice.
- Serve over vegetables, fish, chicken or with bbq meats.
Creamy Sweet Chilli and Corriander Sauce
- Combine all ingredients together.
- Serve warm over steamed asian vegetables, chicken kebabs, prawns or fish.
Three Herb and Caper Sauce
- Combine all ingredients together.
- Serve over char-grilled salmon, chicken or prawns. This sauce is a great low-fat alternative to mayonnaise or tartare sauce.
Seeded Mustard and Garlic Sauce
- Melt butter in a heavy based saucepan, add garlic and sauté 1 minute.
- Add remaining ingredients and season to taste.
- Serve warm over steak, roast chicken, burgers or char-grilled pork fillets.
