Skinny White Sauce (and Variations)

A classic white sauce is essential in any cook's repertoire and this reduced fat version is ideal for those watching what they are eating.

Ingredients

2 cups reduced-fat milk
1 1/2 tablespoons cornflour, blended with a little water to form a paste
flavouring of choice, see below

Creamy Sweet Chilli and Corriander Sauce

2 cups White Sauce
1/3 cup sweet chilli sauce
1/3 cup finely chopped fresh coriander
salt, to taste

Three Herb and Caper Sauce

2 cups White Sauce
2/3 cup finely chopped fresh herbs (basil, chives, continental parsley)
1 tablespoon tiny capers (or regular capers, chopped)
grated rind of 1 lemon
lemon juice, to taste
salt and freshly ground black pepper, to taste

Seeded Mustard and Garlic Sauce

1 teaspoon butter
2 cloves garlic, crushed
2 cups Reduced Fat White Sauce
2 tablepoons seeded mustard
lemon juice, to taste
salt and freshly ground black pepper, to taste

Method

  1. Combine milk and cornflour paste in a saucepan and cook, over medium heat, stirring with a wooden spoon until slightly thickened.
  2. Add flavouring of choice.
  3. Serve over vegetables, fish, chicken or with bbq meats.

Creamy Sweet Chilli and Corriander Sauce

  1. Combine all ingredients together.
  2. Serve warm over steamed asian vegetables, chicken kebabs, prawns or fish.

Three Herb and Caper Sauce

  1. Combine all ingredients together.
  2. Serve over char-grilled salmon, chicken or prawns. This sauce is a great low-fat alternative to mayonnaise or tartare sauce.

Seeded Mustard and Garlic Sauce

  1. Melt butter in a heavy based saucepan, add garlic and sauté 1 minute.
  2. Add remaining ingredients and season to taste.
  3. Serve warm over steak, roast chicken, burgers or char-grilled pork fillets.
