Raspberry and Yoghurt Bircher Muesli

A simple Bircher muesli recipe, which delivers on flavour without the fuss.

Ingredients

11/2 cups rolled oats
2 tablespoons pepitas (pumpkin seeds)
250ml milk
1 apple, grated
1/4 cup freshly squeezed orange juice
1/2 teaspoon finely grated orange rind
200g fresh or frozen raspberries
200g natural yoghurt
2 tablespoons pistachios, chopped
Handy Tips
Use strawberries or other seasonal fruits in place of raspberries if desired.

Method

  1. Combine oats, pepitas, milk, apple and orange juice in a bowl. Cover and refrigerate overnight.
  2. Stir orange rind through muesli and divide between serving bowls. Top with fresh raspberries, a dollop of yoghurt and a sprinkling of pistachios.
