Quick Strawberry, Ricotta Filo Sandwiches

This quick dessert is a great one to use up any leftover ricotta and filo after making spinach and cheese filo pies. Popping the filo in the sandwich press is a genius trick to quick cooking!

Ingredients

250g (1 cup) fresh ricotta cheese
1 tablespoon honey
1 teaspoon each of grated lemon and orange rind
1 punnet strawberries, thinly sliced
1 sheet filo pastry
½ teaspoon cinnamon
50g dark chocolate, finely grated
Handy Tips
Add any nuts or fruit you like to this recipe! Stack the filo into three or four layers for an elegant plated dessert.

Method

  1.   Combine ricotta, honey and rinds in a bowl until smooth.
  2.  Lay filo pastry on the bench and sprinkle one half with cinnamon. Fold in half, then cut into 8 even rectangles. Place filo squares in a preheated sandwich press and cook for 1-2 minutes or until golden brown.  Remove and allow to cool.
  3. Top four of the rectangles evenly with ricotta mixture and a layer of strawberries.  Finish with a piece of filo and sprinkle with grated chocolate and remaining strawberry slices.
