Having a party, make these adorable little pots to form part of a dessert buffet
Ingredients
300ml milk900ml pure cream
1 vanilla bean
100g dark couverture chocolate
3 teaspoons instant coffee powder
2, 55g eggs, lightly beaten
8 egg yolks
200g caster sugar
Method
- Combine milk and cream and divide between three saucepans.
- Add vanilla bean and seeds to the first, chocolate to the second and coffee to the third.
- Simmer each for 10 minutes.
- Combine eggs, egg yolks and sugar and divide evenly between each saucepan.
- Strain each mixture into individual serving pots and bake at 180°C in a bain marie for 20-30 minutes or until just set. Allow to cool.
