The humble ham and cheese toastie gets a glow up! Matt Moran showcases his classic Croque Monsieur using the best Aussie dairy.

Ingredients

Sandwich

8 sliced sourdough bread
200g sliced double smoked ham
80g salted butter
50g Australian gruyere-style cheese, grated

Cheese Mix

100g crème fraiche
2 teaspoon Dijon mustard
1 tablespoon chives, chopped
100g Australian gruyere style cheese)
Handy Tips
Cheese alternatives can be any Australian semi-hard cheese like raclette, tilsit or a hard cheddar.

Method

  1. Watch this video of Matt Moran preparing his Croque Monsieur
  2. Pre-heat oven grill.
  3. For the cheese mix, combine the crème fraiche, Dijon mustard, chopped chives and 100g grated cheese in a mixing bowl, mixing well.
  4. To assemble the sandwich, layer around 1 tablespoon of the cheese mix on half the bread slices and top with the sliced ham and the remaining bread slices. 
  5. Heat a large frypan over medium heat, add the butter and melt. Place sandwiches into the pan and cook until golden brown, turn and scatter the remaining 50 grm grated cheese over the top.
  6. Place under the grill and allow the cheese to melt until golden brown. Remove from the oven and serve.
