French Toast with Berries and Ricotta

A fabulous weekend breakfast treat for the whole family.

Ingredients

8 slices bread
2 cups milk
2 eggs, lightly beaten
1 cup ricotta cheese
1 1/2 teaspoons cinnamon sugar
250g punnet mixed berries
2 tablespoons honey
Handy Tips
Cinnamon sugar can be made by combining 1/2 cup caster sugar with 1 teaspoon cinnamon. Store the remainder for later use.

Method

  1. Whisk milk and eggs until well combined in a shallow dish. Dip bread, one slice at a time into combined milk and eggs, draining excess.
  2. Heat a non stick frypan over medium heat and cook bread on both sides until golden brown.
  3. Mix ricotta and cinnamon sugar together until smooth. If you like it ultra smooth, blend using an immersioon blender. 
  4. Divide French toast between serving plates and top with ricotta mixture, sprinkle with mixed berries and drizzle with honey.
