Creamed Corn with Maple Bacon

Serve this american-style side with southern fried chicken, roast chicken or just on crunchy toast.
Ingredients
4 corn cobs, kernels removed40g butter
1 small onion, finely chopped
2 sprigs fresh thyme
1/2 cup water
1/2 cup pure cream
4 slices streaky bacon
1 tablespoon maple syrup
Method
- Remove the corn kernels from the cobs of corn using a sharp knife and slicing downwards on the cob.
- Heat butter over medium heat in a saucepan. Add the onion and cook for 3-5 minutes or until cooked but not browned. Add the corn, water and thyme and bring to the boil. Reduce heat, cover and simmer for 10-15 minutes or until the corn is very tender. Add the cream and simmer uncovered for 5 minutes or until slightly thickened. Remove thyme and season with salt and pepper.
- Drizzle bacon with maple syrup and pan-fry over medium heat until golden brown and crispy, turning halfway. Cut into slices and serve over corn.
