Berry Ice Cream Cheesecake

When two dairy favourites meet, good things are created! This easy ice cream cheesecake is a great make ahead dessert for easy entertaining

Ingredients

2 cups plain sweet biscuits, crushed
170g butter, melted
375g cream cheese, softened
3/4 cup caster sugar
1 litre vanilla ice cream
250g fresh or frozen berries
fresh berries, for serving

Method

  1. Combine biscuit crumbs and butter in a bowl and mix well. Press mixture over the base and sides of a 20cm springform pan and refrigerate until firm.
  2. Beat cheese and sugar together in a large bowl of an electric mixer, until smooth. Chop up the ice cream, add to the cheese mixture and beat briefy until smooth, then fold in the berries. 
  3. Pour filling into the crust, cover and freeze overnight or until firm. Allow to soften for 15 minutes before unmoulding and serving with extra fresh berries.
