When two dairy favourites meet, good things are created! This easy ice cream cheesecake is a great make ahead dessert for easy entertaining
Ingredients
2 cups plain sweet biscuits, crushed170g butter, melted
375g cream cheese, softened
3/4 cup caster sugar
1 litre vanilla ice cream
250g fresh or frozen berries
fresh berries, for serving
Method
- Combine biscuit crumbs and butter in a bowl and mix well. Press mixture over the base and sides of a 20cm springform pan and refrigerate until firm.
- Beat cheese and sugar together in a large bowl of an electric mixer, until smooth. Chop up the ice cream, add to the cheese mixture and beat briefy until smooth, then fold in the berries.
- Pour filling into the crust, cover and freeze overnight or until firm. Allow to soften for 15 minutes before unmoulding and serving with extra fresh berries.
