Basic Butter Shortbread

A buttery shortbread is a delight and this recipe will not disapoint.

Ingredients

250g butter, softened
1 cup caster sugar
2 cups plain flour
1 cup rice flour

Method

  1. Beat the butter and sugar together with electric beaters until creamy and pale. Sift in the dry ingredients and mix with a wooden spoon until it comes together. Turn out onto a floured surface and lightly knead into a ball. Split the dough into two balls.
  2. Roll each ball of dough out between two sheets of baking paper and cut into star shapes.
  3. Using a spatula, carefully place stars onto a lined oven tray and bake at 160°C for 12-15 minutes or until a light golden colour. Cool on a wire rack.
