Baked Atlantic Salmon in Caper Mustard Cream

These salmon fillets make a perfect dish suitable for a buffet at a large party. Feel free to halve this recipe to make it more suitable for your family.

Ingredients

10, 150g Atlantic salmon fillets or portions
2 1/2 cups (625ml) cream (pure or thickened)
1/3 cup (20g) chopped fresh chives
1 tablespoon (15g) grated lemon rind
1/3 cup (80ml) lemon juice
2 tablespoons (30g) chopped capers
2 1/2 tablespoons (40g) seeded mustard
Handy Tips
Try caper mustard cream in other dishes. Brown chicken fillets in butter with red capsicums, transfer to an ovenproof dish, pour over cream mixture, sprinkle with fresh herbs and bake until golden and cooked. Layer sliced potatoes and bacon in an ovenproof dish. Pour over cream mixture, sprinkle with grated cheddar cheese and bake until cooked.

Method

  1. Place salmon in an overproof dish.
  2. Combine cream, chives, lemon rind and juice, capers and mustard and pour over fish.
  3. Bake at 200°C for 10 minutes and serve
