How long after its use-by date is unopened Australian UHT full cream milk safe to use?

It is not recommended to consume unopened UHT full cream milk after its use-by date, even though it has a long shelf life.

In Australia, food products are marked with either a best-before or use-by date. This date is an indication of quality; you may still be able to consume food once it has passed its best-before date. However, for foods that must be consumed by a specific date for safety reasons, a use-by date is required. 

There are two types of date markings that can be found on Australian food and beverage products—use-by and best-before. Food safety authorities do not recommend consuming products, including ultra-heat treatment (UHT) milk, once they have passed their use-by date. 

UHT milk (also known as long-life milk) is heated to 140°C for two seconds, which kills harmful bacteria and microorganisms, giving it a longer shelf life. Unopened, UHT milk can typically last for six to nine months when stored at room temperature. Once opened, it should be refrigerated and consumed within seven days. 

Even if unopened, it is not recommended to consume UHT full cream milk after its use-by date. More information on use by and best-before dates can be found here.
